DESCRIPTION:
Burete was the name of the estate where Pedro Martínez's grandfather worked, and where he spent some of the best moments of his childhood. With it, he wants to channel his creativity, making wines that amuse and excite him, without limiting himself to a specific area, variety, or winemaking process.
ELABORATION AND AGEING:
It is a sparkling wine made by natural fermentation using the traditional or champenoise method. Initially, a base wine is obtained by fermenting the must in stainless steel tanks at a controlled temperature. This base wine is bottled, and the so-called tirage liqueur, composed of a mixture of sugars and yeasts, is added. The second fermentation then takes place in the bottle, during which carbon dioxide is generated and the alcohol content is completed.
The ageing time is 12 months, during which the wine is refined in underground cellars in contact with the lees, at a constant temperature between 15 and 17ºC. At the end of this period, the disgorging takes place, during which the lees are removed, but unlike other cellars, no expedition liqueur is added, resulting in what is known as Brut Nature, or Zero Dosage.
TASTING NOTES:
Pale yellow with fine and elegant bubbles.
Medium aromatic intensity, with citrus aromas, yeast, white fruit, and light toasts.
Light, refreshing, fruity, medium persistence.
